Ingredients:
- 2 cups peanut oil for frying
- 1 pound peeled and deveined large shrimp
- 1/4 cup cornstarch, more as needed
- 2 large cloves garlic, minced
- ½ teaspoon minced fresh ginger
- ½ teaspoon cayenne pepper
- 1 tablespoon white wine
- 1 tablespoon white vinegar
- 1 tablespoon ketchup
- 5 teaspoons white sugar
- ½ teaspoon salt
- 5 green onions, sliced
Instructions:
- Heat oil in a wok to 375 degrees F (190 degrees C).
- Toss shrimp with 1/4 cup cornstarch to coat. Drop into hot oil, and quickly fry until golden brown, about 45 seconds. Drain on paper towels and set aside.
- Remove oil from the wok, leaving 1 tablespoon behind. Add garlic, ginger, and cayenne pepper. Cook, stirring continuously, until garlic is fragrant, about 30 seconds. Add wine, vinegar, ketchup, sugar, salt, and 1/4 cup water. Bring to a boil over high heat.
- Dissolve 2 teaspoons cornstarch in 2 teaspoons water. Stir into boiling sauce until thickened, about 1 minute. Add shrimp and green onions to sauce and toss to coat.
