Ingredients:
For skewers
- 5 Garlic cloves
- 1/2 tsp cumin
- Pepper corns
- 250 gms paneer
- 1 Cucumber
- Skewers sticks
- 1 Lemon (squeezed)
- 10 Green olives
- 1/2 tsp chilli flakes
- 1/2 tsp black pepper
- Handful of basil leaves
- 1 tbsp red wine vinegar
- 1/2 zucchini, chopped
- 1 Red bell pepper
- 1 onion (cut)
- 3 tbsp extra virgin olive oil
For hung curd dip
- 600 ml hung curd
- 2 tbsp extra virgin olive oil
- 1 tsp chilli powder
- 1/2 tsp black pepper
- 1 Lemon (squeezed)
- Salt (to flavor)
- Handful of dill leaves, chopped
- Handful of coriander leaves, finely chopped
- 1 tbsp honey
- 1 cucumber (de-seeded), finely chopped
Instructions:
- In the grinder add garlic, green olives, chilli flakes, cumin, black pepper, few sprigs of basil leaves and salt. Grind it all together.
- Add olive oil, red wine vinegar, and lemon juice, then mix it with the paste.
- Thread onion, paneer, red bell pepper, zucchini and onion on the skewers sticks.
- Massage marinate into the skewers.
- Pre heat the grill pan and drizzle it with olive oil.
- Gently lower the skewers into the pan and grill it.
- In a bowl, add hung curd, olive oil, chilli powder, black pepper, lemon juice, salt, dill leaves, coriander leaves, honey and cucumber.
- Mix it well and serve it with the skewers.
