Ingredients:
- ¼ cup minced red onion
- 1 tablespoon sugar
- 1 tablespoon finely chopped seeded jalapeño pepper
- 2 teaspoons cider vinegar
- 2 teaspoons low-sodium soy sauce
- ½ teaspoon salt
- ½ teaspoon ground allspice
- ½ teaspoon dried thyme
- ½ teaspoon black pepper
- ¼ teaspoon ground red pepper
- 8 skinless, boneless chicken thighs (about 1 1/2 pounds)
- Cooking spray
Instructions:
- Combine first 10 ingredients in a large bowl; add chicken, tossing to coat. Heat a grill pan over medium-high heat. Coat pan with cooking spray. Add chicken to pan; cook 4 minutes. Turn chicken over; cook 6 minutes or until done.
