Ingredients:
Chicken patties
- 1 pound ground chicken
- Kosher salt and freshly ground black pepper
- 1 teaspoon garlic powder
- 1 small yellow onion, grated
- 1 large egg
- 2 cups panko breadcrumbs, divided
- 1/2 cup hot sauce
- 1 stick (8 tablespoons) salted butter
- 2 cloves garlic, grated
- 2 cups vegetable oil, for frying
Blue cheese sauce
- 1 cup sour cream
- 1/4 cup buttermilk
- 4 ounces blue cheese crumbles
- 1 bunch of chives, finely chopped
- 1/4 cup chopped fresh parsley
- Kosher salt and freshly ground black pepper
Sammies
- 4 potato buns
- 1 small head of iceberg lettuce, cut into thin ribbons
- 1 beefsteak tomato, sliced
Instructions:
- For the chicken patties: Combine the chicken, a heavy pinch of kosher salt and black pepper, garlic powder, grated onion, egg and 1 cup of the breadcrumbs in a large bowl. Use clean hands to gently combine the mixture and then divide into four patties, about 4 ounces each.
- Set the patties on a baking sheet. Fill a plate with the remaining 1 cup of breadcrumbs and press each patty into the breadcrumbs to coat well; don't forget to coat the rim of each patty, too. Set aside for about 20 minutes while you prep the sauces and the grill.
- To make the buffalo sauce, combine the hot sauce, butter and garlic in a small saucepan (you'll cook this down a bit at the grill and then toss the chicken patties in it).
- Heat the grill for medium-high direct heat. Fill a large high-sided pan with the vegetable oil (do not overfill the pan). Heat on the grill until the oil starts to shimmer; this will take about 5 minutes. You can cook the buffalo sauce on the grill at this time, too, if you've got room. Fry the patties in the hot oil for 4 minutes on each side, about 10 minutes total cook time, until they are delightfully golden, crispy and reach an internal temp of 160 f. Cool the chicken patties for 5 minutes before dunking in the buffalo sauce. Don't forget to toast your buns at the grill, too.
- For the blue cheese sauce: In a small bowl, mix the sour cream, buttermilk, blue cheese, chives and parsley. Add a hefty pinch of kosher salt and black pepper. Chill this for about 15 minutes.
- For the sammies: Build each sandwich on a potato bun, laying lettuce, chicken patty, blue cheese dressing and tomato, in that order. Get yourself some extra napkins before you dig in.
