Ingredients:
- 1 (1lb) raw pizza dough recipe, store bought or homemade
- 1 Tbsp Extra virgin olive oil
- 1 small red onion, thinly sliced 1/4 inch thick
- 1/2 cup BBQ sauce, store bought or homemade
- 1 cup chopped or shredded cooked chicken
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded smoked gouda cheese or pepper jack cheese
- 1/4 cup chopped fresh cilantro for topping
Instructions:
- If using refrigerated pizza dough bought at the store, sit it out on the counter to get to room temperature while making the caramelized red onions.
- In a medium non-stick skillet set over medium heat, heat the olive oil. When the oil is glistening, add the red onions and cook until caramelized, stirring occasionally. Turn the heat to medium-low if the being to brown to quickly. This will take between 45-60 minutes.
- Heat oven to 450°F.
- Prepare the pizza dough by rolling or stretching it out on a lightly floured surface, should be about 10-12 inches. Place it on a lightly floured pizza stone or onto a lightly oiled baking sheet.
- Using your fingers, dent the surface of the dough to prevent bubbling. Spread 1/3 cup BBQ on the top the dough and spread it out evenly, taking care to leave 1 inch of space around the edge for the crust.
- Sprinkle 1/2 of the cheese onto the bbq sauce. In a medium bowl, toss the cooked chicken with the remaining BBQ sauce, then scatter it all around the pizza. Add the caramelized red onions and remaining cheese cheeses.
- Bake until the center is cooked and browned on the bottom, about 12-15 minutes. Top with cilantro and serve.
